When Iain and chef Dona inspected the venue, they were immediately drawn to the woodfire pizza oven they discovered out the back. They had always had a vision of opening a Pizza Kitchen in Ballarat, it was fate. As a result, Carboni’s Italian Kitchen was born.
In 1853 Raffaello Carboni became a member of the miner’s central committee during the Eureka Stockade. Carboni was later elected to the local court in Ballarat to adjudicate mining disputes. The tenacious and colourful character displayed by Carboni lives on through our Italian Kitchen’s extensive menu of modern and traditional Italian cuisine.
Our chef Donatello Pietrantuono, came to our region 3 years ago, largely attracted by the abundance of quality food producers in the local area. Chef Dona is passionate about using local produce and always seeks to present friendly, tasty and unfussy dishes at Carboni’s Italian Kitchen.
